Lithuanian Bacon Buns

Lithuanian Bacon Buns, also known as Ausytes, are small bread rolls (or buns) with a bacon filling. They make a great appetizer or dinner party accompaniment. From the outside, they look no different than a standard dinner roll. But when you bite into these brioche-style buns, you and your guests will be rewarded with a surprisingly tasty center!

These treats are traditionally served around the holidays, but at South Chicago Packing we enjoy them year-round. This recipe is a great way to repurpose your leftover mashed potatoes from Thanksgiving dinner, but they are equally as excellent to bring to a potluck or picnic in the Summer. We also suggest serving these buns as a savory breakfast treat with a strong coffee in the morning!

This particular recipe is one of Chef Pete’s grandfather’s favorites and can still be found in some of Chicago’s best South Side bakeries. There is even a Yelp Top 10 Chicago’s Best Bacon Buns List for those of you bacon lovers that are local to Chicago or planning to visit the area.
